Whole Foods opens fast casual inside West Palm Beach store

Bird in the Hand, a fast casual American rotisserie, opened Tuesday inside the Whole Foods Market in West Palm Beach, Florida. The restaurant, owned by Collab Hospitality, is part of the grocer's Friends of Whole Foods Market program — an initiative to bring shoppers innovative, in-store experiences with community chefs, culinary and lifestyle brands — according to a company press release.
 
"We're very excited to welcome Bird in the Hand to Whole Foods Market in West Palm Beach," Rashne Desai, Whole Foods regional vice president, Florida Region, said in the release "They have curated a delicious menu with cutting edge rotisserie fare that forms the perfect bite to appeal to all palates."
 
Collab Hospitality, which owns Hai House and TYCA in Palm Beach, developed Bird in the Hand with the Whole Foods Market customer in mind, Collab Hospitality CEO Manuel Bornia, said in the release.

"While the ideas and flavors are timeless, the interpretation is modern and fresh. Its delicious, accessible and designed to be great both in-stores and delivered," he said.

Bird in the Hand's fresh American cuisine is themed around rotisserie proteins. Menu options include the lemon rosemary bird ($14), twenty spice bird ($14) and black truffle prime rib ($18). Vegetarian options include fire-roasted cauliflower, and a variety sides are also on the menu. They include the pretzel mac-n-cheese ($6), pee wee potato dippers with avocado aioli ($6), maple-roasted bacon Brussels ($6) and garden mashed potatoes ($6).

A selection of house-made desserts include carrot cake ($5), chocolate peanut butter ($5) and red velvet ($5).
